I like squirrel burgers (takes 5-7 if they're grey, about 10 if they're small
red ones). They are also good slivered with parmesan cheese, fettucini
and a little Italian seasoning. |

Not allowed to shoot the red ones around here and the black/grey ones really do look like rats! |

Grey and black? I have never heard of such a critter. Do you have a
photo that you can post? |

Sorry- misstatement- not gray AND black- there are gray ones and there are black ones- no zebra-like striped ones. |

There are fox squirrels, which are the largest. Pine squirrels, which are the smallest. Grey squirrels are medium sized. Then you have ground squirrels with are cannibals.
I like mine with served with farver beans and a nice bottle of chianti. *slurp slurp slurp* |

Breaded, fried in cayenne, tabasco and jalapeno for just the right twang . . . eggs over easy with Texas garlic toast. A cognac after dinner simply hits the spot.
Cajun blackened creole and grits is really a great southern breakfast. Rat for breakfast is almost as good as gator tail or dolphin.
You'd never be able to tell I'm a southern redneck, though, now would ya? |

I just like them cooked well and served with gravy..... the way we had them most when I was a kid. |
